Cold brew infused with yuzu is a welcome twist on your usual coffee-citrus combination. Pison Coffee in Seminyak, Bali offers two cold brew options and one of which features the yuzu, and it’s a fairly new addition to the menu. Yuzu is a Japanese citrus fruit that looks like a round, misshapen lemon but is bigger and tastes like a mix of lime and grapefruit. The drink comes from a tap, creating a distinct, cascading effect that eventually settles and forms a thick foam. It’s topped off with a thin slice of dehydrated lemon. The combination of coffee, nitrogen, and yuzu makes complex flavors with a hint of dark chocolate from the cold brew, tanginess plus sweetness from the yuzu, and the introduction of nitrogen brings all the flavors to the front while giving it a silky texture.
