Let’s Coffee: Gia Palamos

2019-11-14 DailyDrinkMag

Let's Coffee, Manila, Philippines

Why are these two laughing? In this episode of Let’s Coffee? Kayo talks to Gia Palamos, Head Roaster of EACH Coffee Exchange Alley Coffee Roasters in Alabang. They speak about her career so far, becoming the head roaster of one of the country’s premiere coffee shops, and why it’s important to keep doing barista shifts. We go in-depth to dissect her transition from being a barista and becoming a roaster. We ask if this transition is even necessary. Is it a logical step forward in a barista’s career? We get insights on how she started her coffee journey from being a very spontaneous person, making huge career decisions on the spot using mainly her intuition.

“Let’s Coffee?” is a collaboration between Yardstick Coffee and www.dailydrinkmag.com

[…] Yara is known to have a elevation that’s well around 1700 MASL (meters above sea level), and this elevation usually leads to a very sweet and dense coffee. Baristas at Salamangka brew this cup excellently and if you are unhappy with the quality of your cup, they will go the extra mile to make it right. And that “right” cup of coffee? It’s sweet and tangy, with no real bitterness in the cup. This coffee was roasted by E.A.C.H., or Exchange Alley Coffee House in Alabang. (We recently spoke to Gia Palamos, Head Roaster at EACH on our YouTube show, “Let’s Coffee.” See that HERE.) […]
